Warm Spiced Ginger Biscuits with Melora 40+ MGO Manuka Honey

Infused with lemon zest, ginger, and cinnamon, and naturally sweetened with high-quality Manuka honey, these biscuits are a delicious way to enjoy a better-for-you treat. Ingredients:

  • 240g (1½ cups) cake flour

  • 2 tsp ground ginger 

  • A pinch of salt

  • ½ tsp ground cinnamon

  • 120g (½ cup) light brown sugar

  • Finely grated zest of 1 lemon

  • 125g soft salted butter, at room temperature

  • 1 tsp (5ml) bicarbonate of soda (baking soda)

  • 3 tbsp (45ml) Melora Manuka Honey 40+ MGO

  • 2 tbsp (30ml) hot water

Method:

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with baking paper or a silicone mat.

  2. In a small bowl, combine the brown sugar and lemon zest. Rub the zest into the sugar with your fingers to release the lemon oils and enhance the flavour.

  3. In a large mixing bowl, combine the flour, ground ginger, cinnamon, salt, and the lemon-infused sugar.

  4. Add the softened butter to the dry ingredients and mix until the mixture resembles breadcrumbs.

  5. In a separate bowl, mix the Melora Manuka Honey, bicarbonate of soda, and hot water until well combined.

  6. Pour the honey mixture into the flour mixture and stir until a soft dough forms. The dough should be slightly crumbly but hold together. If it feels too sticky, add a little more flour.

  7. Scoop out around 1½ tablespoons of dough and roll into balls about the size of a walnut.

  8. Place the dough balls on your prepared baking sheet, spaced apart. Flatten each slightly with a fork.

  9. Optional: Sprinkle a little brown sugar on top of each biscuit for extra crunch.

  10. Bake for 13–18 minutes until golden and caramel in colour. For a softer, chewier texture, bake for 13 minutes. 

  11. Allow to cool on a wire rack. For softer biscuits, transfer them directly to the rack as soon as they come out of the oven.
