Manuka Honey Oatmeal Cookies

We made these gorgeous MANUKA OATMEAL COOKIES and they're absolutely divine! Here's the recipe:

Ingredients:

- 1/3 cup Melora Manuka Honey
- 1/4 cup coconut oil or unsalted butter (melted)
- 1 large egg
- 1 tsp vanilla extract
- 1 cup instant oats
- 1/2 cup all-purpose flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
- 1/4 cup chocolate chips
- 1/4 cup raisins

 

 Instructions:

1. **Preheat Oven**: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper, foil, or a silicone baking mat and set aside.

2. **Mix Wet Ingredients**: In a large bowl, whisk together the Melora Manuka Honey, coconut oil, egg, and vanilla extract.

3. **Combine Dry Ingredients**: In a medium bowl, whisk together the instant oats, all-purpose flour, baking powder, cinnamon, and salt.

4. **Combine Wet and Dry**: Gradually stir the dry mixture into the wet mixture until well combined.

5. **Add Mix-ins**: Fold in the chocolate chips and raisins.

6. **Form Cookies**: Drop cookie dough onto the prepared baking sheet using a medium-large cookie scoop. Flatten each cookie to about ¾’’ thickness.

7. **Bake**: Bake for 10 minutes, then allow the cookies to cool in the pan for at least 5-10 minutes before enjoying.
