Ingredients
Wet: - 3 large bananas, mashed - 60g olive oil - 60g Melora Mānuka Honey - 2 eggs (or
flax eggs) - 1 tsp vanilla extract
Dry: - 200g plain flour - 1 tsp baking soda - 1/4 tsp salt - 1 tsp cinnamon - 150g fresh
blueberries
Cinnamon Sugar Topping: - 1 tbsp coconut sugar + 1 tsp cinnamon
Instructions
1. Mix wet ingredients.
2. Add dry ingredients.
3. Fold in blueberries.
4. Pour into loaf tin.
5. Add cinnamon sugar topping.
6. Bake at 170°C (fan) for 45–55 minutes.
